In the flan tin, melt the caster sugar into a caramel and spread it to cover the tin completely. 2. Place the milk in a pan over medium heat with the cinnamon, the lemon peel and the brown sugar until it boils. 3. Take the pan off the heat and allow it to cool. 4. Remove the cinnamon stick and the lemon peel and whisk in the eggs. 5. Pour the milk mixture into the flan tin and cover it. 6. Put the tin in a big pan with boiling water over medium heat for 35 minutes. 7. Remove from heat and allow it to cook completely. 8. Turn the flan into a plate, cool in the fridge and serve!
