Custard Cupcakes- "Orelhudos"



















Prep time: 15 minutes  Cook time: 20 minutes  Total: 35 minutes  Servings: 16 units

Ingredients
For cupcakes:
125g of softened butter ;
2 eggs;
1 teacup of sugar;
3/4 teacup of milk;
2 tablespoons of custard powder;
1 tablespoon of baking powder;
1 teacup of all-purpose flour.

For the filling:
3 tablespoons of custard powder;
¾ teacup of milk;
3 tablespoons of coconut milk (optional);
2 tablespoons of sugar;
Cinnamon to sprinkle.



Preparation
Cupcakes
    1. In one bowl add the sugar and butter. Mix it until it turns white-yellow color;
    2. Add eggs and mix for 3 minutes;
    3. Pour the milk and after mixing it well and put flour simultaneously with the custard powder. You will see your mixture with a smooth consistency;
    4. Put the baking powder and mix for 30 seconds;
    5. Heat your oven in 170⁰C;
    6. Pick some cupcake paper and them in a cupcake tin;
    7. With a tablespoon fill ¾ of the paper and put into the oven for almost 20 minutes or until you insert a knife and it comes out clean;
    8. Let them cool down and cut a circle in the middle of each cupcake;
    9. Take this circle, cut into the middle and reserve it.


    The filling
    1. In a pan pour milk, coconut milk, custard powder and sugar. Mix until is homogeneous;
    2. Take the pan and heat it in a medium-low heat while you mix;
    3. Keep mixing it and after few minutes the consistency will start getting creamy;
    4. While the topping is still hot fill every hole of the cupcake;
    5.  Put your two pieces of circles in each cupcake making some small ears;
    6.  Sprinkle some cinnamon at the top and serve it!

    Notes:
    *Do not over mix after put baking powder;
    **Do not bake your cupcakes in a high temperature.

Ingredients Dough: 1 cup Flour; 1/4 cup Hot water; Salt; Vegetable oil. Filling: 4 tbsp Diced onions; 125g Ground pork; Parsley; Meat seasoning of choice; Garlic powder; Olive oil; Salt; Pepper. Glue: Flour; Water. Preparation Dough: 1. In a bowl, mix flour and salt together and then add water, little by little.
