Fluffy orange cake



Prep: 25 min     Cook: 45 min      Total: 1 hour 10 min      Additional: 15 min      Servings: 10





Ingredients
  • 6 eggs;
  • ¾ teacup of caster sugar;
  • ½ teacup of oil;
  • 2 big oranges;
  • 2.5 teacups of all-purpose flour;
  • 3 teaspoons of baking powder;
  • ½ teaspoon of cinnamon (optional).
Additional ingredients:
  •  2 oranges;
  •  1 tablespoon of sugar;
  • 2 tablespoons of butter;
  •  4 tablespoons of all-purpose flour;
  •  4 tablespoons of grated coconut.



Directions
The cake

  1. Preheat the oven at 190⁰C and grease a tin with butter and all-purpose flour;
  2. In two different bowls separate the egg yolks from the white;
  3. Beat the white until peak form and put it on the fridge;
  4.  In the second bowl add the sugar and mix it until it turns white-yellow color;
  5.  Add the oil and mix for 4 minutes;
  6.  Pick one of the oranges and extract its zest to put in our mixture;
  7.  Use the same orange plus one more and extract all the juice;
  8.  Add the juice in small portions simultaneously with small portions of flour until both of ingredients end;
  9.  Beat for 1 minute and half to make sure that our mixture is homogenic;
  10.  Put baking powder and beat it for 30 seconds;
  11.  Finally add half  of egg whites and mix until disappears and then another half. Mix it but leave a small portion of the whites visible;
  12. Pour in a tin and bake it for 45 minutes at 180⁰C or until the tooth pick inserted come out clean.
The syrup
  1.  After having your cake outside the oven let it cool down a little bit and turn the cake out;
  2.  In a pan pour a juice of our one additional orange with a tablespoon of caster sugar;
  3.  Add a bit of peel of the same orange and put the pan in a medium-low heat for 7 to 10 minutes;
  4.  With a fork make some holes in the cake and pour the orange syrup;
  5.  To finalize you can add grated coconut on the top and the decorate with some orange slices.

Ingredients Dough: 1 cup Water; 1 cup All- purpose flour; 1/2 tbsp Butter; 1 Lemon peel; Salt.
