Ingredients
- 6 eggs;
- ¾ teacup of caster sugar;
- ½ teacup of oil;
- 2 big oranges;
- 2.5 teacups of all-purpose flour;
- 3 teaspoons of baking powder;
- ½ teaspoon of cinnamon (optional).
Additional ingredients:
- 2 oranges;
- 1 tablespoon of sugar;
- 2 tablespoons of butter;
- 4 tablespoons of all-purpose flour;
- 4 tablespoons of grated coconut.
Directions
The cake
- Preheat the oven at 190⁰C and grease a tin with butter and all-purpose flour;
- In two different bowls separate the egg yolks from the white;
- Beat the white until peak form and put it on the fridge;
- In the second bowl add the sugar and mix it until it turns white-yellow color;
- Add the oil and mix for 4 minutes;
- Pick one of the oranges and extract its zest to put in our mixture;
- Use the same orange plus one more and extract all the juice;
- Add the juice in small portions simultaneously with small portions of flour until both of ingredients end;
- Beat for 1 minute and half to make sure that our mixture is homogenic;
- Put baking powder and beat it for 30 seconds;
- Finally add half of egg whites and mix until disappears and then another half. Mix it but leave a small portion of the whites visible;
- Pour in a tin and bake it for 45 minutes at 180⁰C or until the tooth pick inserted come out clean.
The syrup
- After having your cake outside the oven let it cool down a little bit and turn the cake out;
- In a pan pour a juice of our one additional orange with a tablespoon of caster sugar;
- Add a bit of peel of the same orange and put the pan in a medium-low heat for 7 to 10 minutes;
- With a fork make some holes in the cake and pour the orange syrup;
- To finalize you can add grated coconut on the top and the decorate with some orange slices.
