Lemon Cake with Custard Topping










Preparation: 20 minutes  Cooking time: 45 minutes  Total: 1hour and 5 minutes
Ingredients
Cake:
4 medium eggs;
1 teacup of sugar;
¾ teacup of oil;
2 tablespoons of lemon juice
1 lemon (use the zest);
1 teacup of milk;
2 teacups of all-purpose flour;
3½ teaspoons of baking powder.

Topping:
1 cup of milk;
2 tablespoons of custard powder;
2 tablespoons of sugar;
A pinch of salt;
A piece of lemon peel.


Preparation
Cake
  1. Preheat the oven at 180c and grease a tin with butter and all-purpose flour;
  2. Pick two bowls and separate the eggs. In one bowl put the yolks and in another put the whites;
  3. Beat the whites with 1 teaspoon of baking powder until peak form and put it on the fridge;
  4. In the second bowl add the sugar and mix it until it turns white-yellow color;
  5. Add oil and the lemon zest. Mix for 5 minutes;
  6. In a pan pour the milk and the lemon juice. Heat over medium heat and when it starts boiling turn it off;
  7. Add ¼ of the milk, mix it and after that put ¼ of the flour. Repeat the same process until finishes these two ingredients;
  8. Put 2½ teaspoons of baking powder and mix for 30 seconds;
  9. To finish, add half portion of the egg whites and mix slowly and delicately. When it's homogeneous add another portion and do the same but do not over-mix;
  10. Pour in a tin and bake in the oven for 45 minutes or until you insert a knife and it come out clean.
Topping
  1. In a pan pour milk, custard powder and sugar. Mix until is homogeneous;
  2. Put the salt and the lemon peel. Take the pan and heat it in a medium-low heat while you mix;
  3. Keep mixing it and after few minutes the consistency will start getting creamy;
  4. While the topping is still hot pour in your cake;
  5. Once you finish your decoration, serve it!
Notes:
* After put the baking powder in a mixture avoid over-mixing;
** It is very important to prepare all the ingredients before you start.

Ingredients Dough: 1 cup Water; 1 cup All- purpose flour; 1/2 tbsp Butter; 1 Lemon peel; Salt. Pork Samosas

Ingredients Dough: 1 cup Flour; 1/4 cup Hot water; Salt; Vegetable oil. Filling: 4 tbsp Diced onions; 125g Ground pork; Parsley; Meat seasoning of choice; Garlic powder; Olive oil; Salt; Pepper. Glue: Flour; Water. Preparation Dough: 1. In a bowl, mix flour and salt together and then add water, little by little. You might need more or less water, depending on the temperature in your kitchen. 2. Work the dough for about 5 minutes until it starts to become hard. 3.
