2 chicken leg quarters
2 tablespoons of olive oil
1 teaspoon of salt
2 tablespoons of orange juice
2 tablespoons of barbecue sauce
1 teaspoon of butter
1 teaspoon of oregano
1 teaspoon of garlic
½ teaspoon of pepper powder
1 teaspoon of parsley
Preparation
- In one small bowl add the olive oil, salt, oregano, garlic, pepper powder and parsley. Mix it well and reserve.
- In a small frying pan put the barbecue sauce with orange juice and butter. Mix and let it cook of 2 minutes in a low heat. Let it cool for 3 minutes;
- Pour it on the bowl and whisk it. Season your chicken with this mixture and let it rest for at least 25 minutes. Preheat your oven (210 ⁰C) 8 minutes before cooking it;
- Pick your tray and put vegetable parchment paper at the top. Place you chicken and put it in your oven;
- Let it cook for 40 minutes or until it's cooked;
- During the cooking process you can add some more sauce with a brush;
- Wile it is till hot, serve with rice, salad, couscous or anything you desire.
