Ingredients
Filling
1 teacup of diced spinach
1 tablespoon of Paprika
1 teaspoon of olive oil
200g of ground turkey meat (it can be any other meat)
1 small chopped onion
2 chopped garlic cloves
3 tablespoons of oil
1 diced tomato
1 bay leaf
1 broth cube
Black pepper powder
Salt
2 tablespoons of pasta tomato
Parsley
3 tablespoons of natural yogurt
Pancakes
1 egg
1 teaspoon of oregano
1 tablespoon of oil
A pinch of salt
Directions
Filling
- Start to season your meat with salt, black pepper powder, olive oil and paprika. Reserve it;
- Place one pan in a medium heat and add some oil. When it starts to heat up add your onion with a bay leaf and let it get a slight golden color;
- Add your garlic and mix. Let it fry for 1 minute and put your meat;
- Once you put your meat mix it well and close your pan for 3 minutes. You will see that once it starts boiling it will start to have some water in it;
- Add the tomato, mix it and let it cook for 2 minutes;
- Pour the pasta tomato and the broth cube. It must cook for 5 minutes;
- Taste it and add some seasoning if needed. Put your spinach and wait until it is cooked;
- Put some black olives pieces and reserve some to the plating part.
Pancakes
- In one bowl put the flour with oregano and salt. Mix with a fork and reserve;
- In another bowl mix an egg with milk and pour it in your first bowl;
- Mix it properly until it turns homogeneous and add the oil. Mix delicately and prepare a frying pan;
- Place the frying pan in a medium-low heat and start frying your pancakes. To fry it just pour 3 tablespoons of your mixture in the frying pan and spread it all over the pan;
- Let it cook of 1 minute and 30 seconds and after that turn your pancake to cook for another 1 minute and half. That means that each pancake will cook for 3 minutes.
Finalization
- Put one pancake in a dish and pour the filling on the top. Spread it a little bit and roll the pancake.
- Do the same process with the rest of pancakes and place them all in a dish;
- Put the sauce (that it is in your pan) around the pancakes and finalize with some yogurt, parsley and black olives on the top;
- Serve it while it is hot.
Notes:
*To serve this dish hot, you just need to start frying your pancakes 12 minutes before you finish cooking the filling;
**In the finalization part do not put the sauce (that it is on your pan) inside the pancakes roll;
***For this recipe you can choose any meat or filling that you want.
