Ingredients
Cake
4 medium eggs
1 teacup of caster sugar
200 grams of butter
3/4 teacup of warm milk
2 ½ tablespoons of baking powder
3 tablespoons of Custard powder
A pinch of salt
Topping
3 tablespoons of custard powder
¾ teacup of milk
Cinnamon powder
3 tablespoons of coconut milk (optional)
2 tablespoons of sugar
Grated coconut
Preparation
Cake
- Preheat the oven at 190⁰C and grease a tin with butter and all-purpose flour;
- In one bowl mix the butter with sugar and salt until you obtain a creamy mixture;
- Add the eggs one-by-one and mix it for about 3 minutes;
- In another bowl put the flour with custard powder and sift it. Add a quarter of this dry ingredient and alternate it with the milk. Make sure that at the end it turns homogeneous;
- Put the baking powder and mix it gently;
- Put your cake batter in the tin and cook this at 180⁰C for 45 minutes or until you insert a knife and it come out clean.
Topping
- In a pan pour milk, custard powder, coconut milk and sugar. Mix until is homogeneous;
- Take the pan and heat it in a medium-low heat while you mix it;
- Keep mixing it and after few minutes the consistency will start getting creamy;
- While the topping is still hot add the cinnamon powder and pour it in your cake;
- Sprinkle with some grated coconut and serve it.
Notes:
* This recipe is just for one layer. If you want to have a cake like the photo just bake it two times;
**After put the baking powder in a mixture avoid over-mixing;
