What to do when the food is too spicy?

Many of us have been in a position where we tried to give our dish a small kick, just to make things a little more interesting, but ended up going overboard. Maybe you've mislabelled your containers and wrote Paprika where it's actually Chilly Powder. Or maybe you meant to add a teaspoon and added a tablespoon instead (I confess that one gets to me a little hahaha). Anyway, could happen to any of us. Often times - unless you're a spice lover - that comes on too strong. Now, there are better solutions to this problem than drinking milk with every bite, though that may go really well with some dishes! Depending on the type of dish you can:

  1. Add Acid Most of the heat we experience in hot peppers comes from capsaicin - a self defense mechanism compound in hot peppers to prevent them from getting spoiled before they're ripe. This compound wards off parasites, so they will not be able to ruin the peppers - because of the burning sensation - until their seeds can be dispersed. Now, capsaicin is an alkaline oil. Let's turn on the science button for a minute and remember that acids neutralize alkalines and vice versa. So adding acids like tomatoes, limes or vinegar can help tone down the heat. 
  2.  Add Dairy Dairy is also acidic, henceforth, it can temper the spice in your food. You can use milk, yogurt or cream for this purpose. Be careful not to exaggerate and lose all your flavors in the process. 
  3.  Add Sweets You might have guessed this already, but yes! Sugar is acidic and can help reduce the spice in your dish. Sugar and honey are great ingredients to add in these situations, and again - don't overdo it!

Teriyaki Pork Chops

Prep time: 15 min      Cook time: 45 min      Total time: 1h Ingredients Teriyaki sauce: 2 tbsp Sugar ½  tsp Honey ½ cup Water  ¼ tsp Minced garlic ¼ tsp Minced ginger 1 tbsp Soy sauce 1 tbsp Corn starch  Pork Chop: 1 Pork chop ¼ tsp Paprika ¼ tsp Thyme ¼ tsp Tumeric ¼ tsp Garlic powder Salt Pepper ½ tsp Lemon juice Olive oil Sesame seeds (optional) Preparation Teriyaki sauce: 1. In a sauce pan over medium high heat, stir together all the ingredients leaving out the corn starch for now, and bring it to a boil; 2. In a small bowl dissolve the corn starch in a bit of water and add it to the boiling mixture; 3. Leave it on heat until it starts to thicken and remove. Pork Chop: 1. Pork Samosas

Ingredients Dough: 1 cup Flour; 1/4 cup Hot water; Salt; Vegetable oil. Filling: 4 tbsp Diced onions; 125g Ground pork; Parsley; Meat seasoning of choice; Garlic powder; Olive oil; Salt; Pepper. Glue: Flour; Water. Preparation Dough: 1. In a bowl, mix flour and salt together and then add water, little by little. You might need more or less water, depending on the temperature in your kitchen. 2. Work the dough for about 5 minutes until it starts to become hard. 3. Cut the dough into 8 equal parts and make them into round balls. 4. Stretch these balls with a rolling pin into round circles (not too stretched). 5. Brush oil on 6 of the circles. 6. Make two stashes of 4 circles placed on top of each other, leaving the ones without any oil on top. 7.
