Ingredients
300g of black-eyed peas
1 small onion
2 cloves of garlic
2 tablespoons of chopped scallions
7 basil leaves
1 cup of water
Oil to fry
Salt
Preparation
- In a blender, put the black-eyed peas, onion, garlic, scallions and basil. Mix it well;
- From time to time keep adding portions of water help blend until you get a paste like this:
- Place a frying-pan in a medium-low heat and add some oil. Let it heat up;
- Using a spoon, scoop bits of the paste into the oil forming a round shape. Let it fry till it turns brownish (about 2 minutes) and change the side;
- Remove from the oil once browned and onto a paper towel to remove the excess of oil;
- Serve with bread and some herbs. Enjoy!
